Vegan Gluten-Free Granola

Ingredients:

1/3 cup natural raw honey (OR pure maple syrup)

1/3 cup natural peanut butter

1 tbsp cinnamon

1 tsp vanilla

1/2 tsp salt

2 cups gluten-free rolled oats

1 cup shredded coconut

1/2 cup pecans

1/2 cup slivered almonds

1/3 cup vegan gluten-free dark chocolate chips (&/OR dried fruit)


Directions:

  1. Preheat oven to 325° F

  2. Add: honey, peanut butter, vanilla, cinnamon & salt to a large bowl. Whisk until evenly incorporated.

  3. Pour the oats, pecans, almonds & coconut into the bowl & fold them into the wet mixture until evenly coated.

  4. Transfer to a greased or lined baking tray & press into a thin, even layer using a spatula.

  5. Bake for 20 mins on the bottom rack of the oven. Then remove & use a spatula to toss the granola. Return to the oven & bake for an additional 6-7 mins, then remove.

  6. Immediately sprinkle chocolate/dried fruit over the granola, using a spatula to toss.

  7. Let cool on the tray before removing.
